    Title: Roast Beef w/Chive Roasted Potatoes
    Categories: Potatoes, Mushrooms, Beef, Herbs, Vegetables
    Yield: 6 servings

    2 lb Red potatoes; in 1" cubes
    2 tb Olive oil
    2 ts Minced chives
    3/4 ts Salt; divided
    2 md Onions; halved, thin sliced
    1 lb Sliced fresh mushrooms
    1/4 c Butter; in cubes
    1 cl Garlic; minced
    1 ts Dried rosemary; crushed
    1/4 ts Pepper
    1/3 c Dry red wine or beef broth
    2 c Cooked roast beef; in cubes
    1 c Beef gravy

    Place potatoes in a greased 15" X 10" X 1" baking pan.
    Drizzle with oil; sprinkle with chives and 1/4 teaspoon
    salt. Toss to coat. Bake, uncovered, at 425° until
    tender, 25-30 minutes, stirring occasionally.

    Meanwhile, in a large skillet, saute onions and
    mushrooms in butter until tender. Add the garlic,
    rosemary, pepper and remaining 1/2 tsp. salt; cook 1
    minute longer. Stir in wine. Add beef and gravy; heat
    through. Serve with potatoes.

    Title: Chicken Chilies Rellenos Casserole
    Categories: Chilies, Herbs, Vegetables, Cheese, Poultry
    Yield: 8 servings

    2 tb Butter
    2 Poblano peppers; seeded,
    - coarse chopped
    1 sm Onion; fine chopped
    2 tb A-P flour
    1 ts Ground cumin
    1 ts Smoked paprika
    1/4 ts Salt
    2/3 c Milk
    8 oz Cream cheese; diced
    2 c Shredded pepper jack cheese
    2 c Coarse shredded rotisserie
    - chicken
    4 oz Can chopped green chilies
    17 oz (2 boxes) cornbread/muffin
    - mix

    Set oven @ 350ºF/175ºC.

    In a large skillet, heat butter over medium-high heat.
    Add peppers and onion; cook and stir until peppers are
    tender, 4-6 minutes.

    Stir in flour and seasonings until blended; gradually
    stir in milk. Bring to a boil, stirring constantly; cook
    and stir until thickened, about 1 minute. Stir in cream
    cheese until blended. Add pepper jack, chicken and green
    chiles; heat through, stirring to combine. Transfer to a
    greased 11x7-in. baking dish.

    Prepare cornbread batter according to package

    directions. Spread over chicken mixture. Bake,
    uncovered, until golden brown and a toothpick inserted
    in topping comes out clean, 35-40 minutes. Let stand 10
    minutes before serving.
