Title: Bibb Lettuce Salad With Mustard Vinaigrette

1 Bib lettuce head, cut up
1 Red pepper; cut into strips
1 Green pepper; cut into
-strips
Bacon; cooked, diced
Shrimp; cooked
Egg; hard boiled; chopped
Mushrooms; chopped
Ripe tomatoes; quartered
1 Rosemary sprig; up to 2, for
-garnish

MMMMM--------------------MUSTARD VINAIGRETTE-------------------------
2 tb Red wine vinegar
4 tb Olive oil
1 tb Mustard; Dijon preferred
Salt and pepper

Arrange bibb lettuce on salad plates. I really don't have a recipe for
this. I usually put onto the salad whatever I decide at the time.
I've used red and green pepper strips, red onion, diced cooked bacon,
shrimp, chopped egg, chopped fresh mushroom or any combination of the
above. Bibb lettuce is a light lettuce so whatever you decide to top
it with, use small dice or slices. One standard vegetable I use is
ripe tomatoes quartered and arranged on the plate with a sprig or 2
of fresh rosemary as garnish.

Mustard Vinaigrette:

Combine all ingredients.
