Canned vegetables suffer from being soggy, mostly.
They lose some vitamins, like B&C, because those vitamins are water soluble but the
canning process doesn t destroy their nutrients.
Fiber, some vitamins and minerals are intact.
If you don t have access to fresh veggies, or you can t cook them, canned vegetables are a
suitable alternative. Suitable nutritionally, anyhow.
