My OG favorite was Eudora. Now I use Thunderbird almost exclusively.

I use Eudora. It has its weaknesses (including that it makes messages
more likely to be marked as spam), and I have to use stunnel in order to have actual basic security, but I like the whole, "everything is a text file" aspect.
