Title: Smoked Salmon Rolls

Yield: 16 Servings
4 Cucumbers, halved across,
- cut lengthwise in 4 wedges
1 1/2 lb Smoked salmon; in 16 slices
1 c Cream cheese
1 tb Lemon juice
1 Vidalia onion; thin sliced
- in 16 slices
16 Grape tomatoes; halved
2 Lemons; in wedges
Flatbreads; opt
On working surface place 1 piece of salmon, horizontally.
In small bowl mix together cream cheese and lemon juice.
Spoon 1 Tbsp cream cheese onto 1 end of salmon slice.
Place cucumber stick on top of cream cheese and vertically
to salmon, using cream cheese to secure it. Roll salmon
around cucumber wedge, should make wide belt around
center. Repeat with remaining ingredients. Arrange rolls
into a pleasing manner onto center of platter. Arrange
onions around edge of plate. Scatter tomatoes around on
platter.
Arrange a lemon wedges around platter, to use to squeeze
over salmon if desired. If using flat breads it looks nice
if their in center of platter.
