    Title: Palak Paneer
    Categories: Indian
    Yield: 1 Batch

    3 c Fresh spinach; chopped
    1 c Paneer; cubed
    1/2 c Tomatoes; chopped
    1 Onion; chopped
    1 Serrano; chopped
    1/2 ts Fresh ginger; grated
    1 ts Fenugreek leaves -OR-
    1 pn Fenugreek powder
    1 c Water
    1 tb Oil
    1 ts Salt

    Saute paneer in 1 tb oil, drain, and set aside. Cook spinach and
    fenugreek leaves in water. Remove greens from the heat and pass
    through a blender. Heat remaining oil in a separate pan and saute
    the onions and ginger. Add tomatoes and mash well with a spoon. Add
    spinach mixture, serrano, salt, and fenugreek powder, if leaves are
    not available; mix well. Stir in paneer cubes and simmer for 3
    minutes uncovered.

    4 c Spinach; finely chopped
    1 sm Onion; finely chopped
    1/2 ts Ginger chili paste
    1/4 ts Turmeric powder
    Paneer cubes; fried
    Salt
    4 tb Ghee

    MMMMM---------------------------PANEER--------------------------------
    3 ga Milk
    Cider vinegar or lime juice

    Paneer:

    To make paneer, bring 3 gallons of milk to a boil. As soon as the milk
    starts to foam up and out of the pot, add apple cider vinegar or lime
    juice until the milk curdles. Filter through cheese cloth or cotton.
    Press under weight for 2 hours to remove remaining liquid.

    Palak Paneer:

    Saute onions in ghee until golden. Stir in ginger chili paste and
    turmeric and fry for 1 minute. Add spinach, salt, and 1/2 cup water.
    Bring to boil. Cook until almost done, then add fried paneer cubes
    and simmer for 5 minutes on a medium flame.
