Title: KFC Cole Slaw

8 c Cabbage (1); finely chopped
1/4 c Carrot (1 md); shredded
2 tb Onion; minced
1/3 c Granulated sugar
1/2 ts Salt
1/8 ts Pepper
1/4 c Milk
1/2 c Mayonnaise
1/4 c Buttermilk
1 1/2 tb White vinegar
2 1/2 tb Lemon juice

If you've ever seen a clone recipe for KFC Cole Slaw floating around
on the Internet, it probably looks like this. That's because this
formula has become one of the most copied & pasted recipes from the
first book, "Top Secret Recipes." It's also one of the most requested
recipes on the TSR Message Board. So, to fulfill all those requests,
and to stake claim to a recipe that's rarely sourced as a TSR
original, here's the killer recipe to clone the world's best slaw.

Be sure cabbage and carrots are chopped up into very fine pieces,
about the size of rice.

Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk,
vinegar, and lemon juice in a large bowl and beat until smooth.

Add the cabbage, carrots, and onion, and mix well.

Cover and refrigerate for at least 2 hours before serving.

One of the (few) things that the Colonel gets "right".

I much prefer Popeyes or lee's Famous for chicken. All of the local
Kentucky Fried Colonel locations have shuttered. Here is a recipe that
purports to be a "copycat" of a Lee's Famous item. Which I've never
seen at any of the many Lee's Famous Chickem joints I have eaten at.

Title: LeeΓÇÖs Famous Chicken Copycat (?)
Categories: Poultry, Vegetables, Rice
Yield: 2 servings

1 lb Chicken breast; in small
- pieces
1 c Diced onion
1 c Ciced celery
1 c Diced carrot
1 c Uncooked white rice
2 tb Olive oil

Heat the olive oil in a skillet/wok over medium heat

Add the chicken, onion, celery, and carrot. cook for
5 - 7 minutes, or until the chicken is cooked through.

Add the uncooked white rice and stir to combine.

Continue cooking for 5-7 minutes, or until the rice
is cooked.

Serve hot and enjoy!

UDD NOTES: I certainly have never seen this on a Lee's
Famous menu. It is good. But, it's not from any Lee's
Famous Chicken location I have ever visited. Pwehaps a
similarly named place owne by Asians exists outside of
my range of territory.

I'm not much of a fried chicken eater now, but we ate it frequently when i
was a kid. Homemade is best of course, but the next best was from a convenience store that no longer exists. I heard a rumor that they
somehow used leftover donut batter as the base for the crust. If so,
perhaps they used leftover donut deepfrying oil for it too. :>

Here's a low fat recipe for KFC Cole Slaw. Coleslaw varies a lot from
place to place. I used to get it at A&W but the last few times i noticed
it was ridiculously sweet. They over-sugared it by far. When i make it
at home, i do not use any sugar at all.

1 c Fat free Miracle Whip
1/4 c Sugar
8 c Cabbage; finely minced
1/4 c Carrot; shredded then minced
2 tb Onion: minced

It doesn't get much easier than this. If you like the taste of KFC
Cole Slaw, but don't like the 10.5 g fat per 3/4 cup serving, you're
going to love this recipe. Using fat free Miracle Whip and sugar you
can make a guiltless dressing to recreate the taste of the world's
most famous cole slaw. The most work you'll do on this one is
chopping the cabbage, carrot, and onion into tiny, rice-size bits.
That's an important step, if you want the texture of the original.
Plus, the chopping action may help burn off what little calories you
consume eating this original Top Secret Recipes fat free conversion
of a fast food favorite.

Combine Miracle Whip with sugar in a large bowl. Mix well with
electric beater until sugar is dissolved.

Add cabbage, carrot, and onion, and toss well. Be sure cabbage and

1 c Mayonnaise
1/4 c Sugar
2 tb Sweet pickle relish
2 tb Dill pickle relish
2 tb White vinegar
2 tb Oil
1 tb Yellow mustard
6 c Green cabbage; chopped fine
1/2 c Shredded carrot
1/4 Yellow onion; minced

Add the mayonnaise, sugar, sweet relish, dill relish,
white vinegar, vegetable oil and yellow mustard to a
large bowl and whisk well together.

Add the cabbage, carrot and onion and mix well.

Refrigerate for at least 2 hours before serving.

6 c Vegetables (1 lb);
- up to 7 c, your choice of
- cabbage, carrots, peppers,
- snow peas, broccoli slaw,
- etc; shredded
3 Scallions; sliced
1 c Cilantro, Italian parsley,
- or mint; chopped

MMMMM--------------------------DRESSING-------------------------------
3 tb Olive oil
1 tb Toasted sesame oil
1/4 c Rice wine vinegar
3 tb Brown rice syrup, agave, or
- honey
1 tb Soy sauce or GF
- alternative like Braggs
- or Coconut Aminos
1 cl Garlic; finely minced,
- use a garlic press
1 tb Ginger; finely chopped
1/2 ts Salt
1/2 ts Chili flakes or chili paste
- optional

MMMMM---------------------OPTIONAL TOPPINGS--------------------------
Toasted sesame seeds
Peanuts or cashews;
- roasted, crushed

Toss slaw ingredients together in a large bowl. Add cilantro and
scallions.

Whisk Asian Slaw Dressing ingredients together in a small bowl.

Pour dressing into slaw and toss well.

Garnish with sesame seeds and/or nuts.

Notes: Salad will keep up to 3 to 4 days in the fridge.

That's one of the things I don't like about KFC. OTOH, my usual side
dish at Popeye's is cole slaw.

Here's a low fat recipe for KFC Cole Slaw. Coleslaw varies a lot from place to place. I used to get it at A&W but the last few times i
noticed it was ridiculously sweet. They over-sugared it by far. When
i make it at home, i do not use any sugar at all.

My mother in law gave me the cole slaw recipe we like--and judge all
others by its standard. I can't give specific amounts of ingredients
because I don't measure (except by "looks about right") when I make it.

MOM'S COLE SLAW

Cabbage, slice, diced, about half a head, maybe 4 cups
One good sized carrot, shredded
Pineapple, either crushed or chopped up slices or tidbits, about half a
cup
Sugar, maybe 1 tbsp, give or take
Salt and pepper to taste
About 1/4 cup pineapple juice
Mayonaise

Combine cabbage, carrot and pineapple juice. Add sugar, s&p, mayo to
taste and enough pineapple juice to slightly thin mayo. Chill for
several hours.

Sorry I can't be more specific but I've made this for so many years
without measuring that this is the closest I can come to exact amounts.
The pineapple is what elevates this from a mediocre to a really good
slaw in our opinion.
