    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Mum’s Curried Mince Mac & Cheese

    Yield: 8 servings

    250 g (8 oz dry weight) macaroni;
    - cooked

    MMMMM-----------------------CURRIED MINCE----------------------------
    1 tb Olive oil
    3 tb Butter
    1 md Onion; chopped
    1 tb Garlic; chopped
    500 g (17 oz) beef mince
    1 tb Durban masala (or your
    - favourite masala)
    1 ts Red ground chile; to taste
    1 ts Ground cumin
    1 ts Garam masala
    1 ts Celery salt
    1 ts Ground coriander
    25 ml Sachet beef demi-glace
    - stock
    400 g (14 oz) can chopped Italian
    - tomatoes; blended

    MMMMM---------------------------SAUCE--------------------------------
    60 g (2 oz) butter
    50 g (1.75 oz) A-P flour
    1 l (34 fl oz) milk
    Salt
    1/2 ts Cayenne pepper
    100 g (3.5 oz) Cheddar cheese;
    - grated
    Mozzarella and Cheddar;
    - grated, to sprinkle

    Heat the olive oil and butter in a saucepan. Fry the
    onion until caramelised.

    Add the garlic and fry for 1 minute.

    Add the beef mince and spices and brown the mince.

    Add the demi-glace and tomatoes. Simmer over a
    medium-low heat until reduced and thickened, then set
    aside.

    To make the sauce, melt the butter in a saucepan and add
    the flour. Cook for a few minutes until the flour and
    butter are golden in colour.

    Add the milk all at once, whisking continuously. Add the
    salt and cayenne pepper. Whisk continuously until the
    sauce starts to thicken.

    Once thickened, remove from the heat and mix in the
    Cheddar.

    Place the cooked pasta in the base of a large casserole
    dish. Pour over the cooked mince and spread. Pour over
    the sauce.

    Sprinkle over a generous amount of Cheddar and
    mozzarella and bake at 170°C until golden brown,
    about 10-15 minutes. Serve hot.

    Title: Steak Salad
    Categories: Beef, Vegetables, Herbs, Breads
    Yield: 4 servings

    2 Red bell peppers; rough
    - chopped
    1 Brinjal (eggplant); rough
    - chopped
    2 tb Olive oil
    2 tb Canola oil
    700 g Rump steak
    10 g Italian parsley; rough
    - chopped
    Salt & fresh ground pepper
    4 Pita breads; toasted
    Hummus; to serve

    Set the oven @ 180oC/350oF.

    Toss the red peppers and brinjal with the olive oil,
    then place on a tray and roast for 30-35 minutes, or
    until caramelised and tender.

    Meanwhile, heat a large pan over a high heat, then add
    the canola oil. Once the oil starts smoking, add the
    steak and cook for 3 minutes on each side, or until
    slightly caramelised. Allow to rest for 10 minutes
    before slicing.

    Toss the roast vegetables with the parsley and season
    to taste.

    Assemble the pitas by stuffing them with hummus, sliced
    steak and roast vegetables.

    COOK'S NOTE: Keep a stash of pita breads in the freezer
    so you always have them on hand.
