    Is there a way to modify sbbs's default ssh timeout or whether or
    not it is sending periodic packets in order to keep it from timeout?

    If you want to disable inactivity time-outs in the Terminal server (for all protocols), give the user(s) the 'H' exemption.

    I'm not aware of any SSH-specific "keep-alive" type message, but if there is one, it would be up to the client to send it.
